Ejeh عجة - Parsley Omelette



A parsley omelette might not sound that exciting, but you'd be surprised at how much flavor emerges from those leafy greens. The smell of freshly chopped parsley on Saturday mornings takes me back to my elementary school days when my mother would be omelette after omelette for all of us.



It's such a simple yet impressive addition to your homemade brunch spread:
Serves 2-3 People
Ingredients:
  • EVOO
  • 6 Eggs
  • 1/2 Head parsley
  • 1/4 Cup Unsweetened Almond Milk
  • Salt & Pepper to taste
Process:
  • Finely chop your parsley. Add to a small mixing bowl and whisk with 6 eggs, almond milk, salt, and pepper.
  • Coat bottom layer of pan with olive oil on medium heat.
  • Pour your omelette mixture into the pan. Cook until the top is thoroughly cooked (unless you like it very runny!) About 7 minutes. Enjoy!
